February’s Limited Edition blend, A Malbec Cabernet pairs perfectly with delicious Blue Cheese Burgers. Here is the full recipe for our version.

The “Vintner’s Choice” Blue Cheese Burger
Prep time: 15 mins | Cook time: 10 mins | Yields: 4 burgers
The Ingredients
- The Beef: 1.5 lbs ground chuck (80/20 lean-to-fat ratio is best for juiciness).
- The Cheese: 4 oz blue cheese (Gorgonzola or Stilton work beautifully).
- The Aromatics: 1 tbsp Worcestershire sauce, 2 cloves minced garlic, and 1 tsp cracked black pepper.
- The Secret “Vintage” Topping: 2 red onions (caramelized in a pan with a splash of red wine or balsamic vinegar).
- The Bun: Brioche or Pretzel buns, toasted with a little butter.
Instructions
- Caramelize the Onions: Sauté sliced onions in butter and oil over medium-low heat for about 20 minutes. Deglaze the pan with a splash of Malbec Cabernet and 1 tsp of brown sugar at the end.
- Prep the Patties: In a bowl, gently mix the beef, Worcestershire sauce, garlic, and pepper. Do not overwork the meat, or it will become tough.
- The Stuffing (Optional): If you want a “molten” center, divide your meat into 8 thin patties. Place a tablespoon of blue cheese in the center of 4 patties, cover with the remaining 4, and pinch the edges tight to seal.
- Grill/Sear: Heat your grill or cast-iron skillet to high. Cook for about 4–5 minutes per side.Pro Tip: If you didn’t stuff the burgers, add the blue cheese crumbles to the top during the last 60 seconds of cooking and cover with a lid to melt.
- Assemble: Spread a little Dijon mustard or balsamic mayo on the bottom bun, add the patty, and pile high with those wine-caramelized onions.
